I get it- we all want to eat healthy but we aren’t exactly cut out for Iron Chef. Hence my new blog series, “5 Minute Recipes”. Let the name speak for itself, and let’s cut to the chase:
ALAS! The famous (or not-so-famous but I’m shocked at how many tags I get for this gd salad) grapefruit-avocado-chickpea salad. I almost gave it all away….
Here are the ingredients:
- 1 can chickpea rinsed and drained throughly
- 1 avocado, chopped into cubes
- 1 grapefruit, cut into cubes
- 2 Tbs extra virgin olive oil
- 1 Tbs squeezed lemon
- Salt & Pepper to taste
Mix together. Tag me in your glorious salads. Enjoy.
